Newport World Resorts joins the Philippines in celebrating National Ube Day on June 12, honoring one of the country’s most beloved ingredients through special offerings across its dining and bar destinations. Few ingredients carry as much meaning within Filipino food culture as ube. The purple yam—with its vivid violet hue, gentle sweetness, and remarkable versatility—has long been woven into the most cherished sweets and celebrations. In recent years, ube has traveled far beyond Philippine shores, earning a presence in international cafés, pastry programs, and dessert menus across the globe. The integrated resort marks the occasion with two creations that honor the ingredient,one through the art of mixology, the other through the craft of pastry.

At The Whisky Library, the pairing of ube and coconut becomes the foundation of El Bimbo, one of the featured cocktails from Cocktail Menu Volume 3, a music-inspired collection that interprets iconic artists and songs through flavor and storytelling. Named after the beloved Eraserheads anthem, the drink translates the warmth of Filipino nostalgia into something modern. Ube cream and coconut form the heart of the cocktail, complemented by lemon and full cream milk, then finished with red dragon fruit powder and toasted coconut chips. Served in a vibrant shade of lavender, El Bimbo balances.

The MICHELIN Guide-listed hotel marks the occasion with the newly added Kasen Burnt Basque Ube Cheesecake to its premium cake selection. Named after 14-year-old content creator Kasen Abelgas, whose “Kasen Eats” platform promotes Filipino cuisine, the cake was developed in collaboration with Executive Pastry Chef Felinio Afable under the guidance of Director of Culinary Chef Meik Brammer. The partnership brings together youthful advocacy and culinary expertise in a dessert that celebrates a distinctly Filipino ingredient. By naming the dessert after Kasen, Manila Marriott Hotel recognizes the next generation of advocates helping bring Filipino cuisine to wider audiences. Throughout June, Marriott Café extends the celebration with ube-inspired desserts across its breakfast, lunch, and dinner buffet offerings.
